My inlaws are coming over tomorrow for our Christmas dinner. I would like to make some Italian food any recipes or ideas would be great. Thanks in advance.

Easy Pasta Primavera

Ingredients
1Eggplant, peeled and cut into
Small sticks
1/2 lbFresh mushrooms, sliced
2Medium carrots, peeled and
Sliced diagonally
3 to 5 clovesFresh garlic, minced
2Medium zucchini, shredded
3 tbspOlive oil
1 tspDried oregano, crushed
1 tspDried basil, crushed
1Large tomato, cut into wedges
2 tbspWater
12 ozUncooked spaghetti or other
Thin pasta, hot cooked and drained
Grated Romano cheese
Preparation
In a large skillet, stir-fry eggplant, mushrooms, carrots and garlic in oil over high heat for 2 minutes. Stir in zucchini, oregano and basil; stir-fry 1 minute more. Add tomato wedges and water; cover and steam 2 minutes. Serve over hot pasta; top with grated Romano cheese.

I want to make a quick chicken recipe. I don’t have any oil though nothing fancy.
I have lemon juice.
all the seasoning’s.
chicken wings.
and, the oven. Are there any recipes or, an easy way to make it. It’s my first time, and i need help please.

Chicken Wings.
4 lbs chicken wings
3 cups flour
3 tablespoons garlic powder
3 tablespoons paprika
3 tablespoons seasoning salt
1/2 tablespoon salt
1/2 tablespoon pepper
1. Mix ingredient together except wings for now.
2. Once ingredient is all mixed together coat wings. Once coated let wings set in fridge for 15min then re-coat again. After you’ve re-coated wings you can grill them. (Broil)
3. You can add your own special sauce to your wings, or from the store.

I would really like some new ideas for toddler friendly casseroles with chicken in them. My toddlers are 18 months. I have school age kids too. My husband is tired of the ones I have been making so I need new recipes.

I make a garlic Parmesan chicken mac & cheese casserole. It’s pretty yummy.

I use whole wheat pasta (if I don’t make it, I use Dreamfields). Then I make a roux (flour and butter) for a white sauce. I use fresh Parmesan in the sauce (the pregrated stuff doesn’t melt very well). In a skillet, I cook garlic in olive oil,with the cubed chicken, salt and pepper. It mellows the garlic. Then I mix everything together and put in a dutch oven. Top with more grated Parmesan and put in the oven just to get bubbly and a nice crust on top. One key is to make more sauce than you think you’ll need because the pasta absorbs it as it bakes.

This also works really well when you have leftover chicken. I just heat it through and mix it in. Also is great with added broccoli and/or mushrooms in it.
